Stephane Colling was born in Alsace, France, where his passion for hospitality and wine began at just sixteen, working in some of Europe’s most esteemed three-Michelin-starred restaurants.
In 1999, he moved to New York City and went on to collaborate with legendary chefs including Alain Ducasse, Gabriel Kreuther, Joël Robuchon, and Daniel Boulud. During his time in New York, he was named Rising Star Sommelier, and earned multiple accolades from Wine Spectator and the James Beard Foundation for Outstanding Service.
After relocating to Montecito, Stéphane co-founded Merci Montecito with his wife, Elizabeth in 2019—a reflection of their shared vision for warm, elegant, and deeply personal hospitality. He later founded 750mls, a bespoke wine advisory and concierge service, extending his philosophy of thoughtful curation and seamless, client-focused experience beyond the restaurant and into private cellars and homes.
